Natural Benefits of Parsley

This leafy herb is more than a throw away garnish…   Found in flat, leafy and curly varieties, parsley is packed with antioxidants such as flavonoids, carotenoids, and vitamins A, C, and K.  It’s anti-inflammatory properties can also aid digestion and soothe gastrointestinal upset.

Here are some home remedies you could try…

Antioxidant Salsa

Why not top dishes like eggs, potatoes, fish and salad with a bright lemony dressing – this will pack a healthy punch.  Combine 1 bunch of finely chopped parsley leaves, 2 tsp. lemon zest, 1 clove of garlic (minced), 2/3 cup of olive oil, and 2 Tbsp red wine vinegar.  Add salt to taste or – if you need to eliminate salt – don’t.

Gentle Detox

This is a refreshing low-calorie beverage, full of anitoxidants and vitamins, for a morning wake up or an afternoon snack.  Chop 1/23 cup of parsley leaves, 1 medium apple (cored), ½ lemon (peeled and seeded), one 1”piece of ginger (peeled), 1 small whole cucumber, and 2 stalks of celery.  Please in your blender and blend well.  Add up to one cup of water for texture.  Strain through a fine mesh strainer and drink over ice.

Tummy Soother

This is for an upset stomach or when you’re feeling under the weather and need something mild to digest.  Put three 6” long chopped zucchini, 3 stalks of chopped celery, 1lb green beans, and 1 to 2 cloves of garlic in 4 cups of water – in a saucepan and bring to a gentle boil.  Reducer the heat and simmer, covered for 15 minutes.  Add 1 to 2 bunches of parsley leaves (that’s about 2 cups) and puree with an immersion blender (and if you don’t have one get one – they are invaluable).  Add salt and pepper to taste and drink hot.  The rest will keep in the fridge for two or so days.
